Now I just want to start by saying that title did NOT say “as a substitute for” or “tastes just like” or “better than the real thing”. Rather it said ATTENTION PIZZA LOVERS! Those of us that love pizza have tried EVERY Trim Healthy Mama (THM) version of pizza and we know that there is no comparison to the real deal. Pizza is just one of those things that are going to have to be a cheat or off plan meal to get the real thing, BUT to those of us who do love pizza these are awesome. I’m talking to those of us that could eat pizza for every meal and do it in the same day. Pizza for breakfast, pizza for lunch, why not have a piece for snack and go out for pizza for dinner. I’m talking to you there…
With that, I should also say I don’t like sweet potatoes. Oh man, this just keeps getting better doesn’t it! But I do really love these. They have so much flavor, they are easy to make and they are SO filling. I’m sitting here writing this post for you after having one for lunch two hours ago and I’m still very full. Another bonus is this is also something you can feed to your whole 30 following friends.
Sweet Potato Pizza Boats
I’m not really sure whether to categorize this as a dinner but I have been enjoying them for lunch. Although I need to try to make them up for dinner on a busy night because I think my family would love them and they are fast to make.
Make up you potato boats
To get started I cook my sweet potato. Now obviously this can be done in different ways and different (purist) people are going to feel better about certain ways. All I’m saying is cook that potato. You can put it in the crockpot in the morning so it’s done for lunch, you can put it in the oven 45 mins before you want to eat. You can come flying through the door carrying an armful of groceries with two screaming hungry kids and throw it in the microwave for 8 minutes. Not that I’m speaking from experience, I mean I saw someone else do that one time. Right right, that’s it. The moral of the story is cook that sweet baby.
Once it’s cooked I like to cut it up into bite-sized pieces. Cover it with my Aldi’s sugar-free spaghetti sauce or whatever sauce you love. I then top it with my favorite pizza toppings.
Top it off
Now pizza isn’t pizza without pepperoni right. Where are my pizza loving friends, PEP-PER-ONI PEP-PER-ONI PEP-PER-ONI! BUT remember we are using a sweet potato which makes this meal a THM E meal. E means carbs not fats so pepperoni is off the list. Welcome to the scene turkey pepperoni, you have come to save the day. Now you do have to be careful with portion size on these babies because too many will push you over but you can have some. I dice those up small because I obviously want some in every bite. No Cheese
Pile that baby high but again also remember THM E mode. No fat, which means no cheese either. Don’t stress though I still can promise you this is a great meal! You could sprinkle with parmesan cheese but otherwise no cheese. After you have it loaded up sprinkle it with a little Italian seasoning and pop it back in the microwave for one minute. If you do not have a microwave or don’t want to use it you can also put it in the oven on low broil for just a short 2-4 minutes. Then you are ready to ENJOY and I promise you DEFINITELY will!

Ingredients
- 1 large (or two small) Sweet Potato Cooked your way
- 1/4-1/2 Cup Sugar-free Spaghetti sauce I use Aldi's brand
- Pizza Toppings of your choice that are low in fat. I like turkey pepperoni, Peppers, onions, olives, etc
- Sprinkle Sprinkle with Italian Seasoning
Instructions

Cook your sweet potato however you wish. Crockpot, oven, or microwave are some easy options.

Top with sauce and your favorite toppings. Even if it is only one thing
