Let me introduce myself
Well hello, again my friends! It’s been a while. Summer kind of came in like a roaring lion. I have to admit I was anxious about having everyone home every day but it flew by. It’s amazing how summer does that. In the mix though, I took a serious break from blogging and I’m ready to jump back in.
With such a long break I feel like I need to introduce myself again! Hello!! I’m Jill, Mama of six wild animals as we call them. They are growing so fast and it’s amazing how the times are changing in our house. No matter how things change though this mama has to be organized and scheduled or things do not run well. With that being said freezer meals in bigger portions are still an essential part of our lives!
Although I took a break from posting I didn’t take a break from Trim Healthy Mama (THM). I tried to work our summer fun around my eating plan. Making healthier choices for my family (sometimes) and as often as possible for myself. I’m ready to share some of the great meals we enjoyed starting today with these Easy Freezer Chicken Enchiladas.
Easy Freezer Chicken Enchiladas
Mexican food usually in on our menu once a week. Everyone seems to love it so I figure might as well make this a tradition. I also love that I can usually easily make Mexican food THM friendly. This recipe simply just uses some Mission low carb tortilla shells to make it on plan. If you aren’t into using these “frankenfood” type substitutions you could also just make the filling and top with the sauce and then enjoy it over a bed of lettuce.
This recipe is super easy and I love to make extras up to keep in the freezer. If you haven’t heard about my freezer meal theory you should definitely check it out. I love to simplify dinner time so making extra meals and keeping them in the freezer is a major blessing for my family.
The easiest way to get started with this recipe is to wake up in the morning and get your chicken going in the crockpot. I just pack that puppy up full of chicken and let it go until the afternoon. When the chicken is all cooked I drain out the liquid and shred it up. If I have enough room I like to just add the other filling ingredients right to my crockpot to keep the dishes down.
After the filling is ready just fill up those shells with filling and some shredded cheese if you would like it. Fill up your pan with the stuffed shells. When that is all set you just need to make up the sauce and pour it over the shells. You can also top it with more cheese!
Bake at 350 for 30-40 minutes. Sometimes I broil for the last few minutes to get the top crispy.

Easy Freezer Chicken Enchiladas
Ingredients
- 4 Cooked Chicken Breasts Cooked and shredded
- 2 T Taco Seasoning
- 16 oz Sour Cream
- 1 Cup Salsa
- 3 Cups Shredded Cheese
- 16-20 Mission low carb tortilla shells
- 3/4 Cup Chicken Stock
- 1/4 Cup Chili Powder
- 1 t Cumin
- 8 oz Tomato Paste
- 8 oz Tomato Sauce
- Salt and Pepper to taste
Instructions

Cook chicken and shred it. I like to do this in my crockpot!

Mix Chicken, Taco Seasoning, Sour Cream, and Salsa.

Spray 9x13 pan with butter spray.

Spread filling into shells evenly and top with shredded cheese. Lay into the pan.

Mix remaining ingredients and pour over the top. Top with more cheese if desired.

Cover and bake at 350 for 30-40 mins.

To freeze do not bake just cover and freeze. When you are ready to use thaw and follow baking instructions!
Super Easy and GOOD!
The can easily be eaten as a “Bowl” type meal instead of rolled up in shells also. You won’t be disappointed they have lots of flavor.
For the Taco Seasoning, I enjoy making my own following the recipe at wholenewmom.com. It’s super easy to make and I make a quart size mason jar of it up every couple of months.
If you would like to freeze this meal just stop before the cooking step and cover to freeze. When you are ready to eat it just thaw and follow the same heating instructions!
