It is jar salad day and what can be better than a wonderfully refreshing summer favorite. I have found that a great way to come up with new jar salad options is to look at my favorite sandwiches. This week I took my chicken salad sandwich filling and gave it new life as a jar salad.
Chicken Salad Jar Salad
I start to make the chicken salad mix by cooking my chicken in the crock pot. I do not add anything to my pot except the chicken. When it is done I drain it and shred it up with my pampered chef masher. To that, I add 1-2 cups of mayo, a head of celery chopped small, pecans, grapes (small amount for THM), and some dried berries. You do not have to add all of this as I know for my Trim Healthy Mama (THM) friends we are not supposed to have grapes or dried berries. I figure you have so few of them I am willing to sacrifice it. For the dried berries I use Trader Joe’s or Fresh Thyme’s that have no sugar or fillers.
Once you have this mix made you can place it in the bottom of your jars. I like a GOOD hearty amount and then stuff it full of lettuce.

Chicken Salad Jar Salad
A wonderful and refreshing spin on a Chicken Salad sandwich
Ingredients
- 4 Chicken breasts cooked and shredded I do this in my crock pot
- 1-2 cup(s) Mayo Depending on how creamy you like it
- 1 head Celery chopped into bite size pieces
- 1 cup Pecans or nuts of your choice
- 1 cup Quartered grapes
- 1/2 cup Dried berries I use the no added sugar one from Trader Joe's
- Shredded Lettuce or lettuce of your choice
Instructions

Combine Chicken down to the dried berries in a bowl

Add more mayo to your liking

Put 1/4-1/2 cup of the mix in the bottom of your jars

STUFF full of lettuce. ENJOY!
