When I have a salad I always think I’m making a great healthy choice. On this journey I have been on to eat better, I have sadly found out not all salads are created equal. By not all, I should probably say more like not many at ALL are created equal. They taste amazing but they are loaded with sugar and calories. When I go out to eat I might as well just order the chicken fingers and fries that I want because the salad is probably not any better!
My mom brings this amazing cauliflower salad to many family gatherings and I always devour it. I asked her for the recipe and was blown away that it has 1/4 cup of sugar in it! Ouch! Of course, my love for the salad did not end when I heard of all that sugar! Instead, I thought I bet I can make this salad a healthier option. I also thought it would be a PERFECT mason jar salad! Cauliflower Bacon Jar Salad
This Salad is a great one for the summer rush but also comes in handy when you need a side for dinner! I have even taken one or two of them and thrown them together to take to a potluck! Lots of great options to make your summer time in the kitchen non-existant. We all know that’s a great thing!
For this tasty Salad just layer the ingredients in the order into your jar and stuff it as full as you can with your lettuce! These will keep for at least a week if you stuff them full. Here are some tools I love to use when making my mason jar salads.

Cauliflower Bacon Jar Salad
Ingredients
- 1/4 Cup Mayo
- 2 T Parmesan Cheese
- 1 T Super Sweet
- 2-4 T Bacon Cooked and chopped
- 1/4 Cup Cauliflower Raw and chopped into bite size pieces
- Stuff Full of Lettuce
Instructions

Layer in this order into your quart size mason jar.

Stuff as full as possible with lettuce!

This will keep for up to a week. Dump into a bowl and stir it up to enjoy it!
