Have you ever gone to Outback Steakhouse and had their Alice Springs Chicken? Only one word can describe it…wow! I must admit though there are SO many great options at outback that it is hard to order just one.
This week I’m bringing the Alice Springs chicken home and in Trim Healthy Mama (THM) form also! This recipe is a great option for your freezer cooking this week. If you have not read about my freezer cooking theory you should definitely check it out and learn how you too can spend just ONE night in the kitchen each week! Alice Springs chicken is a GREAT option for the freezer as it thaws and cooks up so wonderfully!
Alice Springs Chicken THM S
Not only is this recipe wonderful when it is done it is also a pleasure to make because it is fast and easy. Again I think I say that about every recipe but really that is because I do not have the time or the want to spend hours in the kitchen. I want to get in there and get it done and cleaned up so I can enjoy my family.
This one is as easy as this…lay the raw chicken in your pans. I like to use aluminum pans that I buy from Sam’s club along with these lids and then I line them with parchment paper. I do this so that I can easily take it out and cook in glassware. If you do not have a Sam’s near you, you can also order them from amazon.com but they are slightly more expensive. Back at it here…lay that chicken in the pan you can even keep them frozen if you are using frozen meat. Next up mix up the mustard down to the onion. I also throw my mushroom in that so that they get good and chopped up. I am not a mushroom lover. Spread this over the meat, top with bacon and cheese and you are good to go!

Ingredients
- 4-8 Boneless chicken breasts
- REAL Bacon bits (or you can cook and chop it)
- 1/4 cup Mustard
- 1 T Super sweet
- 2 T Mayonaise
- 2 t Powdered onion
- 8 oz Canned mushrooms optional
- 2 cups Shredded Colby Cheese
Instructions

Lay Chicken in greased pan.

Combine Mustard down to the powdered onion and then spread over chicken.

Chop mushrooms into very small Pieces and top chicken.

Follow with Bacon and cheese.

Bake at 350 for 35-45 minutes.

You can also freeze this before cooking and then thaw and follow the cooking instructions.

Everyone that has tried it just raves about it! If you are wondering what a good side to serve with this would be I like to use my jar salads as a side. One jar works for my family of 8. It is not a huge portion but plenty for everyone to have a little. You could also do a vegetable blend or mashed cauliflower. My non-THM husband and children also enjoy rolls or potatoes.
