Wow…what a week. Kid puking everywhere. I’m cleaning up from one child and another turns and pukes on me. It is the mommy life and to be honest, that week of being home was really nice. The kids are so snuggly and just want you by them. As much as I cannot stand the smell of vomit I enjoyed taking care of my babies.
When I survive a week of sickness with my family I have to say, I wonder how in the world people get through if they are not prepared for the week. I was SO thankful for my freezer full of meals and the jar salads I had prepped for the week. I even had to bring a snack for a field trip but I had prepped it two weeks ago so all I had to do was pull it out of the freezer. Wondering how you can make your life a little less

Bacon Cheeseburger Casserole
Once you have checked that out you will understand that you can cook just one night a week and have great meals each night. You do this by making multiples of your meals on that night you cook. This week I used this recipe from bunsinmyoven.com called bacon cheeseburger casserole. This is a low carb sugar-free Trim Healthy Mama (THM) Satisfying (S) meal. This recipe reminded me a lot of the THM Cheeseburger pie but was definitely different. I also thought it would make an excellent breakfast casserole. Even better you could just have the leftovers for breakfast. Either way, it was very good and my family does approve!
How to make it easier
Like I said I love this recipe but I always looking for the fastest easiest way to make it happen, so today I’m just sharing with you those tips. To start, I loaded the ground beef, onion and garlic (x4) into my electric pressure cooker. I set my pot to the meat setting on medium and it went for about 40 minutes. If you do not have a pressure cooker you can definitely just follow the directions or even do it in your crock pot. This may not be faster but you can set it and forget it! Which means when it’s time to put it together it does not take long at all.
After that was done I divided it into two large mixing bowls and added the next 5 ingredients (down to the eggs). This worked great because the meat was still warm so it was very easy to mix up. Once it was mixed I divided it between my four 9×13 pans. Next, I mixed up the eggs and cream and added the last two ingredients. I poured that mixture over the meat. Topped it with bacon (possibly bacon bits HEHE), cheese, and dill.
You are DONE!!
That’s all she wrote! It is that easy. Done cooking for the week! I did not bake this before freezing. When I’m ready to cook it I will thaw it and bake according to the directions.
