Jar salads are so awesome and essential to my daily success with Trim Healthy Mama (THM). If I don’t have great things prepped I totally fall off the bandwagon. I use these for lunches and even snacks and pot lucks. They are filling and fantastic! I love bleu cheese so anything with it instantly is a favorite with me so it’s no surprise that this salad was number 2 on my top 10 list last week!
Bleu Cheese Strawberry Chicken Jar Salad -THM S
Now onto the details for this one. I’ve used both my poppy seed dressing and my honey mustard dressing and they are both amazing.
To get this recipe started I first put my chicken into the crock pot. I do not add anything else just throw the breasts in and let it go for about four hours. When it’s done I drain out the broth and let it cool. I think it’s easier to break up and chop when it’s cool. While it’s cooling I make my salad dressing (either the poppy seed or the honey mustard) and start filling my jars.
After the dressing, I add about 3-4 strawberries (cut up) and 1/4 cup pecans and 1/4 cup bleu cheese. The chicken is the last thing I add before I stuff it full of lettuce. If you are curious about what kind of lettuce I use and other tips and trick check out my post about mason jar salads.

Bleu Cheese Strawberry Chicken Salad
This makes 4-6 jar salads
Ingredients
- 1 cup Recipe for poppy seed dressing or honey mustard dressing
- 4 Chicken breasts cooked and shredded or chopped and then also cooled
- 10-12 Strawberries hulled and cut up.
- 1 cup Pecans
- 1 cup bleu cheese
- Lettuce to stuff full!
Instructions

Start by cooking your chicken in the crock pot and allowing it to cool. Then shred or chop it.

Make up your poppy seed or honey mustard dressing. I usually put 1/4-1/2 cup.

Follow by adding the strawberries, pecans, and bleu cheese.

Stuff as full as possible with lettuce!

Of course you can my cousin who is my THM partner doesn’t like blue cheese either. She usually uses feta but you really could use any cheese or go dairy free too!
