There is one type of meal that my family seems to gobble up without any complaints, anything rolled in a tortilla shell! Do you have a certain meal that your family just loves? My family also loves pasta but that’s probably because I do not make it very often. My kids just love anything in a tortilla shell so this week’s freezer meal is right up their ally. The best part is that it is SUCH an easy meal to make!
Buffalo Chicken Taquitos
You are going to be so happy you chose to get the ingredients for this meal because it is so quick and fast to make. Not to mention your family will love it! I start by putting my chicken breasts, cream cheese, and buffalo sauce into my crock pot. Let it cook for 4-6 hours. When it’s done I let it cool and then use my pampered chef chopper to shred the chicken and mix it all together.
Once it’s all mixed together I load about 2 Tablespoons of the mix into mission low carb tortilla shells. I line these up in a 9×13 pan. From here I freeze them. When I’m ready to use them for a meal I thaw them and bake at 350 for 20-30 minutes. For some extra flavor, I also top them with shredded cheese for the last 5-10 minutes in the oven. The shells get crispy and they are so WONDERFUL!

Buffalo Chicken Taquitos
Ingredients
- 4-6 Skinless boneless chicken breasts
- 8 oz Cream Cheese
- 1/2 Cup Buffalo or hot sauce I use the Aldi brand
- 10 Mission Low Carb Tortilla Shells
- Shredded Cheese
Instructions

Combine your chicken, cream cheese, and buffalo sauce in a crock pot.

Cook 4-6 hours and then cool slightly.

Shred and combine and then spoon 2 Tablespoons of mix into your tortilla shells.

Bake at 350 for 20-30 minutes.

Top with cheese for last 10 minutes.
I hope this meal will be a great hit for you and your family. My kids sure loved it and they were not too spicy. You can also serve them with sour cream and salsa.
