If you’ve been following me for a little while you know that I’m passionate about freezer meals and I also love Trim Healthy Mama (THM). I love that you are into these things also. What can be better than finding great ways to feed your family well and yet not stress over it because you are prepped and prepared.
One thing I regular admit to struggling with is getting in my healthy carb lower fat meals. To us THMers we call these meals E meals or energizing meals. Today I want to share with you an easy and wonderful THM E meal!
Chickpea Stew THM E
I love the THM cookbooks but I’m always watching for other great recipes. I found this one over at the Healthier Steps Blog. The recipe on the blog gives very thorough and great details, but of course, I wanted to make this even easier.
What could make it easier you say? The Instant Pot of course! I used canned chickpeas and basically, just threw everything listed in the pot! I set it on the medium soup setting so that it went for 40 minutes.
While the pressure cooker was doing its magic I cooked up some brown rice to serve with this also. You could do quinoa instead of the rice if you want or you could even throw the rice or quinoa right in with the stew if you wanted a thicker stew.
Rainy Day Stew
There you go a great stew for a cool rainy day this spring. You won’t regret it and you will love the leftovers for an easy filling snack or fast lunch.
