It’s time for a recipe that is not from a cookbook. One that I have made up and love. These Pesto Chicken Roll-Ups are SO easy and tasty. Your family will love them. Make up four pans for your freezer and you can be DONE cooking for the week. Did I say DONE? Yes, I did. Done cooking for the whole week just by spending 30-40 minutes in the kitchen. You can do it and I’m happy to show you how!
Pesto Chicken Roll-Ups
Easy and fast who can ask for anything more! Just lay out your chicken and cut it in half. Once this is done you can lay it between plastic wrap and pound it thin. Now I have to admit when I see this step in recipes I often skip it but this week I bought a meat tenderizer and did it. It made it super easy to roll these up and I’m assuming they will also cook faster.
After they are thin (or not) you season them with salt and pepper and cover them in pesto. I’m lazy and use the aldi brand pesto. After that slice your tomatoes and lay on on each breast. Then roll those babies up. Cover them in shredded cheese and a few grape tomatoes.
From here you can either put these in the oven or freeze them and stock up your freezer!
Pesto Chicken Roll-Ups
Ingredients
- 4-6 Large Chicken Breasts
- Salt and pepper to taste
- 1 Jar Pesto or homemade version I use the Aldi brand
- 3-4 Tomatoes cut thin
- 8 oz Shredded mozzarella
- 1 Container Grape Tomatoes
Instructions

Cut your breasts in 1/2 and pound them thinly (If you don't want to it's ok you don't have to but it makes it easier to roll them up).

Lay your chicken out and season with salt and pepper.

Next, cover them with pesto.

Lay one tomato in the center of your chicken.

Roll up your chicken breasts. I use a toothpick to hold them together.

Lay them in your 9x13 pan.

Cover with Cheese and grape tomatoes.

Bake at 350 for 40-50 minutes
