It’s dinner time and again we are running around wondering what we can throw together from what we have in the fridge! Stop that vicious cycle. Calm your anxieties and plan ahead. You will feel so much better as the day goes on and you already know what’s for dinner. If you have not read about my freezer meal theory you definitely should but I also want to share another idea with you today.
Another Way to Prep for the week without using your freezer!
If you do not have the freezer space or you do not enjoy eating things out of the freezer there is another way! Another way to prep in one evening is to plan four different meals and cook them all in one nigh. Then you just keep them in the fridge to use that week. I’ve done meals this way also and it works great. I just make them up and store them in my outside fridge. They are ready to go and I don’t have to worry if I forgot to pull something out of the freezer. This is another great option to save dinner time!
Caulifer Cordon Bleu
With that being said I would like to share with you another freezer meal (or bulk cooking) recipe that was a hit for my family! This is called Cauliflower Cordon Bleu. It was so good! If you haven’t tried cauliflower rice yet this is a great recipe for it, but I must say I planned to go to sam’s and get a bunch of it and they didn’t have it this week! WHAT!! Instead, I bought frozen rice and put it in my food processor. Literally, less than two minutes and I had BEAUTIFUL cauli rice (don’t mind that its rainbow cauliflower…not sure what that means but when it cooked there was no color left. It said organic on the bag too so I’m not sure what the color was about but hey it worked.)
Anyway, this recipe was super easy and the taste was wonderful. I put the Cauli rice (even whole cauliflower would work if you want to skip this step) in the pan. Cover with diced boneless ham and shredded cooked chicken. I like to do my chicken in the crock pot and then drain it and chop/shred it up. Make the cream sauce and pour it over the top. Shred your swiss cheese and load it up! All done!

Cauliflower Cordon Bleu- THM S
Ingredients
- 1 16oz bag Riced Cauliflower or whole frozen Cauliflower
- 1.5-2 lbs Boneless Ham Diced
- 3-4 Chicken Breasts Cooked and Shredded
- 1/4 Cup Butter
- 3 Cups Heavy Cream
- 5 T Mustard I used Dijon
- 1 t Crushed Garlic
- 1 t Gluccie
- 1 egg yolk
- 1 block Swiss Cheese Grated. I do this in my food processor
- 1 Cup Parmesan Cheese
Instructions

Place Cauliflower in greased pan.

Top with Shredded Chicken and diced ham.

Make the cream by heating the butter and cream. Add the mustard to the pan and garlic.

Remove from heat and sprinkle with Gluccie and whisk it in well.

Allow to cool a little then add in the egg yolk.

As the mixture sits it will thicken. If not add more Gluccie.

Sprinkle the ham and chicken with salt and pepper to your taste and then cover in the cream sauce.

Top with both Cheeses and bake at 350 for 30-45 mins.

This is a great one to broil for the last few minutes too!

Love this idea for my Prepped at Home cooking business!! One comment–you add an egg yolk in step 5 but it’s not in the ingredient list. Is it just one yolk?

Another question: would you cook this first and then freeze it? What are the reheating instructions or do you have those in generic form elsewhere? Sorry about the questions!
