Sometimes we just need a good hearty meal. This casserole is creamy and great even though it is low in fat and healthy. My family has really enjoyed this tasty dish. This meal makes a super option for your freezer cooking this week too. The rice does not need to be cooked prior and everyone just gets mixed together. Easy, tasty, and healthy who could ask for anything more?
Cheesey Ham and Broccoli
Ask for anything more, let’s get real I would love someone else to stock my freezer! Obviously, though that isn’t happening. With a family of 8, no one even wants to come to my house for dinner. Just kidding people know where the good food is. Anyway enough about me and my crazy household. This is just a reminder that if I can do this so can you! Make a plan and get to work because there is no maid coming to serve you dinner.
For this meal, you first need to mix up the sauce. Next, you put everything else together in a large bowl and finally top it with the sauce. Once it’s all mixed together well you can pour it into your 9×13 pan and top with nutritional yeast if you have some on hand. At this point, you can freeze your meal. When you are ready to eat it just thaw and cook at 350 for 35-45 minutes.

Cheesey Ham and Rice
Ingredients
- 2 Cups Lowfat Greek yogurt or Lowfat Sour cream
- 2/3 Cup Almond or coconut milk
- 1/4 Cup Parmesan Cheese green can kind
- 1/4 Cup Nutritional Yeast Optional
- 2 2/3 Cup Water
- 1 t Garlic Powder
- 1/2 t Salt
- 1 1/2 Cups Uncooked brown rice
- 2 Bags Frozen Broccoli Can also use fresh 3 cups
- 2 Cups Extra Lean turkey ham I get mine at Aldis
Instructions

Combine Yogurt, almond milk and parmesan cheese.

Combine all the rest of the ingredients and then cover with the cream sauce.

Top with Nutritional yeast for some extra flavor!

Bake at 350 for 35-45 minutes.
Freezer Meals
