Do you ever crave some kind of comfort food? Sometimes a good hearty casserole is just what the body needs. Well, maybe not NEEDS but more like wants. I have a love for Chicken Pot Pie so this week I’m revamping my Chicken Pot Pie to be Trim Healthy Mama (THM) friendly. This recipe will not fall in the satisfying (S) meal or Energizing (E) meal but rather is a crossover. That means this is still on plan but yet not something we want to eat on a regular basis if we are trying to lose weight. For my family though, this is a great option!

Chicken Pot Pie THM Crossover
For this recipe, I started with my basic pie crust recipe which uses flour and regular sugar and translated it into Sprouted white wheat flour and stevia. This pie crust recipe was originally given to me by an old coworker and it is SO wonderful and EASY to work with. You start by melting the butter in the microwave (or however if you prefer to not use a microwave), then you add the flour and sugar. Mix it up and press it into the pan. Did you hear that…press it into the pan…no rolling it out. No struggling to get the right size and texture just PRESS IT IN. AMAZING. Easy and so tasty.

Easy Press-In Pie Crust THM Crossover
Ingredients
- 2 Sticks Butter
- 2 cups Sprouted White Wheat Flour I use https://healthyflour.com/product/organic-sprouted-white-wheat-flour/
- 2 Donks Pure Stevia a donk is 1/32 of a teaspoon
Instructions

Melt Butter in the microwave (or over the stove)

Add in flour and sugar until combined.

Press into round baking dish.
After this crust is in the pan, if I have an extra I will add more flour to it to make a crumble for the topping. If I do not have extra I make a 1/2 batch and again add extra flour make it a crumble topping.
Chicken Pot Pie Assembly
Once you have the crust assembled you get to add in the goods. I start to prepare this by cooking my chicken in the crock pot. Just throw it in and let it go. I do not add anything to it. When it is done I use my pampered chef chopper and shred it all up well. Next up, to the still warm chicken, I add an 8oz block of cream cheese and the heavy cream (keeping the chicken liquid in the mix also). Add in the seasonings and a bag of frozen mixed vegetables. Fill your pie crust with this goodness and top with the leftover crust crumble. These freeze wonderfully and when I’m ready to cook it I thaw it and bake at 350 for 45-60 minutes.

Chicken Pot Pie THM Crossover
Ingredients
- 1 Pie crust Recipe (2 sticks butter, 2 cups sprouted flour, 2 Donks Stevia) Pressed into the pan
- 4 Boneless Skinless Chicken Breasts Cooked and Shredded
- 8 oz Cream Cheese
- 1/2 Cup Heavy Cream
- 1/2 t Onion Powder
- 1/2 t Garlic Powder
- 1/4 t Salt
- 1 bag Frozen Mixed Vegetables
Instructions

Prep Crust and press it into you round baking dish.

Cook and Shred the chicken

Add the cream cheese, heavy cream, and seasonings to the warm chicken and drippings.

Mix in the frozen vegetables.

Fill the Pie pan with the chicken mixture.

Top with a crust crumble made by adding more flour to the crust recipe.

Bake at 350 for 45-60 mins
This recipe is one of those that my family does not feel like I am feeding them diet food. Not that many THM meals feel like diet food but this one is a great “fooler”! Let me know what you think of it!
