When you are hungry and looking for something to eat, where do you usually go? For me, it’s straight to my pantry. I know I have said this before but I have had to train myself to GET OUT OF THAT PANTRY! There is nothing good for me in there. Where could I find good healthy FRESH options?? The Fridge of course! I’ve help train myself to do this by not buying anything (that I should eat) that has to be kept in the pantry. I know that there isn’t anything in there for me. It’s hard but it’s helped me so much. I love raspberries and blueberries just as much as I love chips (amazingly) but I won’t find those in the pantry and sometimes I just simply forget where I should be looking.
Help yourself out by prepping for the week!
With that being said I again stress how important it is on the Trim Healthy Mama (THM) plan to be prepped. If you aren’t it is SO easy to fall into bad habits. One way I prep myself for the week is to make a different jar salad for lunch. I honestly eat these almost every day for lunch. Lunch is a time when I come home and feel rushed and starving and if there isn’t something ready I’m eating whatever I make for my kids.
Having these salads prepped and ready makes SUCH a difference. I have come up with so many different kinds that I just cycle through them each week. Each week I only make one kind for the whole week. I prep them on Tuesdays and make enough for every day and sometimes an extra to use as a side for dinner. It’s a great way to get a huge serving of vegetables in and they are SO filling!
Creamy Bacon Cheddar Pea Jar Salad
The best way I have found to come up with new Jar Salad Recipes is to take things I love and put them in a jar. Chicken salad, why not make it a jar Salad? BLT, Why not make it a jar salad? Broccoli Slaw, why not make it jar salad? When I was at a potluck and a saw a yummy pea seven layer salad I thought…WHY NOT MAKE IT A JAR SALAD?? So, of course, I did!

Creamy Bacon Cheddar Pea Jar Salad
Ingredients
- 1 Cup Mayo
- 1/2 Cup Greek Yogurt
- 1 t Garlic powder
- 2 T Super Sweet
- 2-4 T Mustard
- 6-8 Slices Cooked and crumbled Bacon (or bacon bits)
- 1-2 blocks Sharp Cheddar Cheese cut into chunks
- 3-4 Hard boiled eggs
- 3-4 Cups Frozen Peas
Instructions

Mix the first five ingredients to make your dressing and portion into your jars. About 1/4-1/2 cup each.

Make sure your bacon is cooked and crumbled and then add it evenly to your jars. About two slices per jar or 1/4 cup of bits.

Cut your cheese into chunks and portion it into the jars.

Either chunk or slice or chop up your hard boiled eggs and throw them in!

Add the frozen peas! I don't fill these completely to the top because that is a LOT of peas for one sitting but it's still super yummy!
