Deconstructed Peppers
This recipe is found in the Trim Healthy Mama (THM) Trim Healthy Table (THT) cookbook. Now don’t stop reading if you do not have the cookbook because even if you do not have it there are many great similar recipes on Pinterest you can use. If you do have the cookbook the recipe can be found on page 54 with a photo on page 55.
The only major thing I did differently in mine is made the peppers smaller in my food processor. Sometimes we just gotta trick these kids into eating good stuff!
Another option
Sometime else great to try with the recipe is using the pressure cooker (or instant pot) to make it up. You can honestly just throw EVERYTHING in that magic pot and set it on the meat setting medium (40 mins) and let it do its job. When it’s done you can fill at least two 9×13 with a full 8qt full pot and probably 2-3 pans. I let this cool and then freeze it. When I want to cook it up I let it thaw and then bake it at 350 for 30-40 mins.
