Dinner time…it’s that time of day between after school/snack/homework/bath mass chaos and bedtime… and yet we wonder why we suddenly have a panic attack when this time of day arrives. We have had all day to prepare and it did not even cross our mind until the exact moment when your husband walks in the door and you have nothing ready! Lazy lasagna to the rescue…
This was the story of my life and I decided it was time to claim this as my own and conquer it because that is my goal in life. It’s a fun challenge to me to take these times when life is hard and choose to make it easier on myself. This, in turn, makes it better for me and even more importantly for my family.

- A peaceful, and productive after school rush… you know that time well I’m sure…it’s the time when everyone comes flying off the bus yelling their wishes and expecting everything to happen at once.
Well, this weeks recipe helps all my wishes come true! It’s healthy, delicious and no fuss! If you haven’t read my first ever blog post…first of all you should… but if you haven’t I explain my freezer cooking theory. How I make four of the same recipe so I can keep my freezer stocked and also have meals to bless other families with!
Lazy Lasagna
After my weekend meal planning, grocery list making, then my Monday grocery store trip. I am more than ready to whip this up. I timed myself and to make four batches of this it took less than 40 minutes!

This lasagna is made without noodles and is grain and sugar-free!
First, brown the meat (I often do this in my crock pot while other things are happening during the day so that it’s all ready for me… just drain) and add the spices and the sauce. Then I get my workout showing that spinach whose boss…I mean who has time for soggy spinach. Lots of elbow grease and paper towel and we are good to go! Layering is the final, easy touch for a delicious meal.
