This week I want to share with you another great recipe that you can add to your freezer meal list. This is a great healthy meal not only for your family but to bless other families with also!
Mama Mia Meatloaf
I know everyone in the Trim Healthy Mama (THM) world is probably sick of hearing about this new cookbook. Really if you are following the plan and have not purchased it yet, you need to save up and get it. There are so many WONDERFUL new recipes to try. Trim Healthy Table will not disappoint you.
No Cookbook use a Pinterest Recipe
With that being said this recipe is from the new cookbook but just because you do not have the cookbook does not mean you cannot benefit from this post. There are many on plan meatloaf recipes on Pinterest that are also very good and will work great for your freezer cooking this week!
Here are few Pinterest recipes you can use if you do not have the Trim Healthy Table cookbook. Bacon meatloaf from joy-filled eats, low carb meatloaf, and mommy’s meatloaf from Brianna Thomas. All of these will work exactly the same.
Recipe on page 214
If you have the Trim Healthy Table Cookbook then you can flip to page 214 and get to work. I just followed the recipe exactly and my only advice is that you cut your onions small. I didn’t use my chopper and they were a little too chunky for me. Guess I have some texture issues.
Another thing I did because I was making FOUR pans of this is I did not use the food processor for the meat part. Instead, I put it all in a big bowl, took off my rings, and dug in with my hands to combine everything. I did use the food processor for the tomato sauce portion because four times the sauce did fit in my food processor.
Other than that just follow the recipe until the putting it in the oven part. At this point, you want to freeze your raw meat until you are ready to use it. When I cook it up I allow it to thaw and then I try to drain out any liquid from the pan. After that just throw it in the oven. I did find ours produced a lot of greases so I did drain some more of that off when it was done with the cooking.
I served this meal with some of the blender bread from the Trim Healthy Table Cookbook and broccoli with cheese on top. It was a wonderful and filling meal!
Enjoy it again
We don’t usually have leftovers from our dinner but when we had this meatloaf we did! I used the leftover meat to make up some more of the Big Mac Jar salads! I skipped all the seasoning part of the salad recipe and just used this meat in its place. Even better when you can use ALL of the meal. Make it up into salads or eat it warmed up for lunch. Either way, it’s a great meal for you and your family!
