It seems even if you eat healthy most of the time you still enjoy a little comfort food every now and then! One thing I do not often make is pasta and my family LOVES pasta. Last night I fed them this Goulash and it was like I was the most popular girl at the school dance. Everyone oohed and ahhed and said they hated it because at our house if you say you do not like it you get a second helping. Lots of people hated the goulash not because they did not want it, but rather because they were hoping for that second helping!
If you are just joining us here at onemorelittlething you should definitely read my freezer meal theory to help you understand why I post weekly. You will also find out how you can spend just ONE day in the kitchen per week. When I say “day” I do not mean 8 hours either, but rather just 1-2 hours! Sound like a dream? Then you have come to right place. Jump in and join us!
One Pot Goulash
Goulash and spaghetti are already pretty easy meals to throw together quickly but this version just takes it over the top. One pot…I mean literally throw those uncooked noodles and raw meat it and you are good to GO! This one pot I use is, of course, the amazing electric pressure cooker or instant pot that I plug on a regular basis. I do not get paid to tell you how amazing this thing is but rather I tell you about it because it is just that FABULOUS and it has cut my kitchen time by so much!
Anyway, this weeks freezer meal was done in this amazing pot but if you do not have this you definitely can continue on with us. Even if you do not have one you can certainly make this recipe by browning your meat and cooking your noodles like you normally would. I have made this recipe into a Trim Healthy Mama (THM) friendly recipe by using the low-carb Dreamfields elbow noodles. You can find a photo and link to them above but for you Michigan readers these are also available at Meijer. This recipe is amazingly an S meal even though the pasta has carbs. Wondering what all this Trim Healthy Mama (THM) stuff means you can read more about it here.
Get to the Goulash
For this meal, if you do not have an instant pot just make sure you cook your noodles and brown your beef first and then basically add everything in and simmer for 10 mins. If you have the wonderful pot you can start by adding in your tomatoes (undrained), your ground beef, and everything else. I put the noodles in last. Set your pot to the soup setting medium, mine goes for 30 minutes. Put that lid on and wallah! Dinner is done in about 40-50 minutes depending on when the pressure is built up enough. The best part about this is not only is it easy to throw it all in but you only have ONE pan to wash! When this pot is done you have 2-3 9x13s all set to go depending on how full you would like them to be. I easily did three from one batch.

Now, this REALLY is a treat when you can literally spend 10 minutes throwing everything in and then forget about it. Before you know it you have three of your four meals done for the week. Make another pot and you have six meals made and can bless another family with your wonderful meal! My THM friends please remember we are not supposed to reheat pasta so this would not work well for a freezer meal but it’s great family meal to feed a crowd!

Just 1 jar of spaghetti sauce?
Jill says
Yes there isn’t a ton needed because of the tomatoes and what not. You could always do more than one though. I Know my family loves things super tomato-ish!
