Who loves the taste of pizza and pepperoni? I mean there is just nothing like it. It’s something I miss so much when I am really watching what I’m eating. Of course, when the new Trim Healthy Mama (THM) cookbook Trim Healthy Table came out and I saw pizza casserole I had to try it. Not only do I LOVE pizza and pepperoni. I also have GREAT memories of the wonderful pizza casserole my mother in law used to make.
Easy Pizza Casserole
I have to admit I’m all about the fast and easy whenever I cook and although this recipe has “easy” in the title I think this recipe is a little more intense than most things I make. With that being said I did have to rice my own cauliflower because the two stores I went to didn’t have it. Let’s be honest though with a food processor that doesn’t take too long, but it was messy.
I was also using this for my freezer cooking for the week so it meant ricing 5-8 heads of cauliflower. Maybe it really wasn’t that difficult but you know me I just love fast easy meals that are also good and healthy of course! Am I asking too much?
The recipe for Easy Pizza Casserole is on page 126 of the Trim Healthy table cookbook. If you do not have the cookbook yet please don’t let that stop you. You can use this recipe and put it on a top of a cauliflower crust.

I followed this recipe exactly how it is written. I did have to cook my crust longer than it said but that was the only thing I changed. Well, I guess I did have to rice my own cauliflower also but that is just cutting and putting it into the food processor. After the crust was good and I topped it off with my toppings I froze it. When I’m ready to eat it I will thaw and cook according to the directions. This is a great meal to make four of and be done with your cooking for the week!
