What do you have going for dinner? I know it’s Tuesday and it’s 10 AM but do you have a plan? If you would have asked me that question a few years ago I would have said I have NO idea. Who thinks about that in the morning and actually has a plan. Then at 4:30 PM you would find me sweating in the kitchen trying to dream up a wonderful dinner from the crazy things I see in the pantry. I was so sick of that! I wanted to be that mom that had it all together. I’m here to tell you that now I do know what is for dinner tonight and not only that but I know what is for dinner for the WHOLE week! Can you believe that and not only do I know what I’m having I have it already COOKED! No way you say…well believe it and you too can be right here with me. Each Week
Each week you can join me here on my blog and find a wonderful healthy (Trim Healthy Mama THM) freezer meal. These meals are easy because I do not enjoy being in the kitchen all day either! They are also so yummy even my children rave over them. Each week you can check back to see what I’m making and add it to your meal plan. There you go, I’ll even take the thinking out for you! With that being said let’s jump right into this weeks freezer meal.
Spinach Stuffed Chicken
I found this recipe over at Basil and Bubbly and my family really enjoyed it. I found it was very easy and even though the chicken had green in it, my kids (who are all under 9) ate it well.
Basically, I followed the Recipe just as it is listed. I first tried to make the spinach mix in my food processor but it didn’t work very well, so I moved it to my stand mixer. That worked much better. I think because I was quadrupling the recipe it just was too much for my food processor at once.
After the spinach mix was made I simply cut a slit in the chicken breasts and filled them with it. Then I topped it off with some parmesan cheese and seasonings. I did not saute mine in the olive oil instead I moved them to my freezer pans and froze them. When I am ready to serve this meal I will thaw them and just go right to baking them at 350 for 35-45 minutes.

If you make four pans of these I bet you can do it in under 30 minutes and then BAM… you are DONE cooking for the week! I know it will be worth it to you. Your family will be wondering where this super mom came from. She’s serving up a wonderful and healthy warm meal and she’s doing it with a smile on her face.
