Is it FINALLY summer? Feels so good to have a break from the schedule and yet I find myself running around like a wild lady. Grabbing food on the go that isn’t the best for my body. Taking time each week to prep my jar salads has been such a blessing as we fly off to the pool. A day away from home does not have to mean bad food choices!
Summer Fruity Chicken Jar Salad
This salad is so refreshing and great to eat poolside or pack for a day at the beach. It can also be a great side to bring along to a potluck! You need to start by making this wonderful Trim Healthy Mama (THM) poppy seed dressing. Next up you want to cook and shred your chicken. I like to do this in my crock pot. Just put it in and let it go for 4-5 hours. Then I drain it and chop it up. Let your chicken cool. Once those are made you can just simply layer the rest in order in your jar and stuff it good and full of lettuce! If you would like some more tips on mason jar salads definitely check out this post!

Summer Fruity Chicken Salad
Ingredients
- 1/4 Cup Poppy Seed Dressing (1 cup mayo, 1/4 cup almond milk, 1/4 cup MCT oil or olive oil, 2 T Super sweet, 1 1/2 T ACV, 1 T poppy Seeds)
- 2-3 Strawberries Chopped into Bite-sized Pieces
- 2-3 Mandarin Orange Chunks
- 2-3 Pineapple Chunks
- 5-6 Almonds chopped
- 1/4-1/2 Cup Cooked and Shredded Chicken Breast This is about 1/4-1/2 of a breast
- Lettuce of your choice
Instructions

Start By making your dressing and then filling your jar with 1/4 cup.

Layer each item in the order listed.

Stuff full of lettuce. You can use any lettuce you like! I used iceberg mixed with Spinach.
