Pesto Chicken Roll Ups

Pesto Chicken Roll-Ups

Ingredients

  • 4-6 Large Chicken Breasts
  • Salt and pepper to taste
  • 1 Jar Pesto or homemade version I use the Aldi brand
  • 3-4 Tomatoes cut thin
  • 8 oz Shredded mozzarella
  • 1 Container Grape Tomatoes

Instructions

  1. Cut your breasts in  1/2 and pound them thinly (If you don't want to it's ok you don't have to but it makes it easier to roll them up).

  2. Lay your chicken out and season with salt and pepper.

  3. Next, cover them with pesto.

  4. Lay one tomato in the center of your chicken.

  5. Roll up your chicken breasts.  I use a toothpick to hold them together.

  6. Lay them in your 9x13 pan.

  7. Cover with Cheese and grape tomatoes.

  8. Bake at 350 for 40-50 minutes
